Toffee & Apple Crumble
Serves: 4
Ingredients - For the base
450g cooking apples
75g soft brown sugar
60g butter
Half teaspoon cinnamon
Ingredients - For the crumble
175g flour
75g butter cubed
25g caster sugar
75g demerara sugar
Method - For the base
Dice the apples into large chunks, & place into a pan with the butter, sugar & cinnamon.
Cook gently until the apples just start to soften, but are still mostly whole.
Remove apples from the pan, with a slotted spoon, & place into baking dish.
Pop the pan back on the heat & reduce liquid by half, stirring with a wooden spoon, & poor over the apples
Method - To make crumble
Sieve flower into the bowl, rub the butter into the flour, until it resembles bread crumbs.
Stir in sugar, keeping a heaped tablespoon of Demerara sugar to sprinkle over the top.
Sprinkle crumble thickly over the top, & evenly over the fruit & press down lightly with the Palm of your hand to smooth.
Bake at 180 degrees gas mark 4. For 30 - 40 minutes, until the fruit is bubbling & the crumble golden.
Serve with cream, custard or ice cream
We cooked ours in a glass dish that fits our air frier perfectly.
Worked very well.
