Mom's Trifle
Trifle! Nanny Screen would be pleased her recipe has been passed on.
This recipe was used by my Nan and passed onto my Mom. My mother has been the queen of Trifle throughout or family functions.
Ingredients
Jam swiss roll.
Glug of sherry.
Frozen raspberries.
1 pint custard
1 x tablespoon sugar
300g double cream
If desired, silver balls, grated chocolate or cake toppings.
Method
Swiss roll preferably just jam and no cream.
Slice and place in bottom of trifle dish.
Glug of sherry just to moisten.
Add layer of fruit (I tend to use frozen raspberries) make up or buy 1 pint custard. (Blancmange powder no longer available)
Allow to cool for a while so you don't squash/melt fruit too much.
Add tablespoon sugar to custard mix if home made.
Pour over fruit. Cool completely.
Whisk up 300g double cream in clean bowel until double size but not too thick. Needs to be spread over custard mix evenly then flick knife up gently over cream to form tiny peaks. If desired, scatter tiny silver balls, grated chocolate or cake toppings over surface.

NOTE: Add sugar to custard straight away, don't wait to go cool
