Chicken & Chorizo Jambalaya
Ingredients
1 tbsp olive oil
2 medium chicken breasts (chopped)
1 large onion (finely chopped)
1 pepper (thinly sliced)
4 garlic cloves (minced)
1 pack mushrooms (sliced)
1 ring chorizo (skinned & sliced)
250g long grain brown rice
400g can tomatoes
500ml chicken stock
2 tbsp Cajun seasoning
Method
1 Fry off the chicken in olive oil until golden (5-8 minutes)
2 To the same pan, add the onions and cook until soft
3 Then add the garlic, pepper, mushrooms, chorizo and Cajun seasoning, and cook for another 5 minutes
4 Add the tomatoes, chicken stock and rice. Stir together, cover, and simmer for 35 minutes
