Bolognese Sause
Bolognese is one of our staple favourites. It's a base you can add to so many accompaniments. As normal, it's one of the dishes we bulk cook and it's fantastic to freeze.
Ingredients
5 large onions, finely sliced.
20 garlic cloves, finely chopped.
4 teaspoon of sunflower oil.
225g chorizo, sliced into discs.
750g lean mince beef
400g sliced mushrooms
8x 400g chopped tomatoes
2x jar of tomato pesto
100g tomato puree
4 teaspoon Bovril
4 teaspoon wholegrain mustard
2 tablespoon mixed herbs
2x chopped pointed peppers
4x chopped bell peppers
250ml red wine
Glug of Worcester sauce
4 teaspoons lazy chilli
Method
1. Add the sunflower oil, garlic and onions. Cook until the onions are translucent (about 10 mins).
2. Add the chorizo and minced beef steak. Cook until the beef has sealed. (about 10 mins).
3. Add the rest of the ingredients and simmer for 40 mins string occasionally.
We serve ours with 150g of steamed white cabbage or 70g of wholemeal pasta per portion.
Its nice served with garlic or sundried tomato flatbread and a sprinkle of fresh parmesan.
